Tortilla Española (Spanish Omelette)

I'm so proud of myself!!! Not by any means do I consider myself a chef or a cook, but I do like to eat so I do my best to prepare edible dishes for myself and my occasional taste-testers, lol! So this evening I embarked upon my first journey to create traditional Spanish dishes. First up: Tortilla Española

This dish is pretty simple with very few ingredients: potatoes, eggs, onions, olive oil, salt, and pepper. Of course like an American omelette you can add other items if you wish. For my first time I decided to keep it simple and I stuck with the traditional main ingredients.

Here is the RECIPE and below are pics of my tortilla! Next time I'll try it with cheese, other veggies, and the Sofrito(salsa) suggested as a add-on at the bottom of the recipe page.
